African Chicken Peanut Stew Recipe

African Chicken Peanut Stew simmers tender chicken thighs in creamy peanut butter sauce with sweet potatoes, bell peppers, ginger, and warm West African spices. Hearty one-pot comfort food ready in 45 minutes.

  • 2 lbs chicken thighs bone-in skin-on
  • 2 tbsp vegetable oil
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 1 red bell pepper chopped
  • 2 sweet potatoes peeled 1-inch chunks
  • 1/2 cup tomato paste
  • 1 cup natural peanut butter
  • 4 cups chicken broth
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup chopped peanuts
  • Fresh cilantro chopped
  • Cooked rice for serving

Instructions

  • 1. Season chicken with salt, pepper, and smoked paprika. Heat oil in large Dutch oven over medium-high. Brown chicken 5-6 mins per side. Remove and set aside.
  • 2. Lower heat to medium. Add onion, garlic, ginger, and bell pepper. Cook 5 mins until softened.
  • 3. Stir in tomato paste, cayenne, and bay leaves. Cook 2 mins. Add peanut butter and gradually whisk in broth until smooth.
  • 4. Add sweet potatoes and browned chicken. Bring to simmer, cover, reduce heat to low. Cook 25-30 mins until chicken is tender and potatoes cooked through.
  • 5. Remove bay leaves. Adjust seasoning. Serve over rice topped with peanuts and cilantro.

Notes

  • Scoop peanut butter off top of natural brands (oil separation normal).
  • Bone-in thighs add rich flavor; shred meat off bones before serving.
  • Make ahead: flavors deepen overnight. Freezes well up to 3 months.
  • Spice level: reduce cayenne to 1/2 tsp for mild version.
