- 2 lbs chicken thighs bone-in skin-on
- 2 tbsp vegetable oil
- 1 large onion chopped
- 3 garlic cloves minced
- 1 tbsp fresh ginger grated
- 1 red bell pepper chopped
- 2 sweet potatoes peeled 1-inch chunks
- 1/2 cup tomato paste
- 1 cup natural peanut butter
- 4 cups chicken broth
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 2 bay leaves
- Salt and pepper to taste
- 1/4 cup chopped peanuts
- Fresh cilantro chopped
- Cooked rice for serving
- 1. Season chicken with salt, pepper, and smoked paprika. Heat oil in large Dutch oven over medium-high. Brown chicken 5-6 mins per side. Remove and set aside.
- 2. Lower heat to medium. Add onion, garlic, ginger, and bell pepper. Cook 5 mins until softened.
- 3. Stir in tomato paste, cayenne, and bay leaves. Cook 2 mins. Add peanut butter and gradually whisk in broth until smooth.
- 4. Add sweet potatoes and browned chicken. Bring to simmer, cover, reduce heat to low. Cook 25-30 mins until chicken is tender and potatoes cooked through.
- 5. Remove bay leaves. Adjust seasoning. Serve over rice topped with peanuts and cilantro.
Notes
- Scoop peanut butter off top of natural brands (oil separation normal).
- Bone-in thighs add rich flavor; shred meat off bones before serving.
- Make ahead: flavors deepen overnight. Freezes well up to 3 months.
- Spice level: reduce cayenne to 1/2 tsp for mild version.
