1½ cups all-purpose flour,
½ cup powdered sugar,
½ cup cold unsalted butter, cubed,
¼ teaspoon salt,
16 oz cream cheese, room temperature,
¾ cup granulated sugar,
2 large eggs,
⅓ cup fresh lemon juice,
2 tablespoons lemon zest,
2 tablespoons all-purpose flour,
½ teaspoon vanilla extract
Instructions
Preheat oven to 350°F. Line 8×8 pan with parchment. Mix flour, powdered sugar, salt. Cut in cold butter until mixture resembles coarse crumbs. Press into pan.
Bake crust for 12-15 minutes until edges are lightly golden.
Beat cream cheese until smooth. Add granulated sugar, beat until fluffy. Add eggs one at a time. Blend in lemon juice, zest, flour, and vanilla.
Pour cream cheese mixture over hot crust. Bake 25-30 minutes until center is almost set but slightly jiggly.
Cool completely at room temperature for 1 hour, then refrigerate for at least 2 hours before cutting.
