  • 1½ cups all-purpose flour,
  • ½ cup powdered sugar,
  • ½ cup cold unsalted butter, cubed,
  • ¼ teaspoon salt,
  • 16 oz cream cheese, room temperature,
  • ¾ cup granulated sugar,
  • 2 large eggs,
  • ⅓ cup fresh lemon juice,
  • 2 tablespoons lemon zest,
  • 2 tablespoons all-purpose flour,
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F. Line 8×8 pan with parchment. Mix flour, powdered sugar, salt. Cut in cold butter until mixture resembles coarse crumbs. Press into pan.
  • Bake crust for 12-15 minutes until edges are lightly golden.
  • Beat cream cheese until smooth. Add granulated sugar, beat until fluffy. Add eggs one at a time. Blend in lemon juice, zest, flour, and vanilla.
  • Pour cream cheese mixture over hot crust. Bake 25-30 minutes until center is almost set but slightly jiggly.
  • Cool completely at room temperature for 1 hour, then refrigerate for at least 2 hours before cutting.
