Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup kale, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  • 2. Add turmeric and stir for 1 minute.
  • 3. Pour in chicken broth and bring to a boil.
  • 4. Add carrots and celery, simmer for 10 minutes.
  • 5. Add shredded chicken and kale, cook until kale is wilted.
  • 6. Season with salt, pepper, and lemon juice.
  • 7. Garnish with fresh parsley and serve warm.
