Apple Broccoli Salad

A refreshing and nutritious salad combining the crisp sweetness of apples and the crunchy texture of broccoli.

  • 2 Honeycrisp apples, diced
  • 2 cups broccoli florets
  • 1/2 cup walnuts or almonds, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Wash the Honeycrisp apples thoroughly under running water. Once clean, dice them into bite-sized pieces. Make sure to remove the core and seeds.
  2. Wash the broccoli and cut it into florets. You might want to steam the broccoli briefly for a softer texture, but raw works wonderfully for a crunchier bite.
  3. Whisk together the mayonnaise, honey, apple cider vinegar, salt, and pepper in a separate bowl until smooth and well combined. Adjust seasonings to taste.
  4. Combine the diced apples and broccoli florets in a large bowl, mixing evenly to distribute the flavors.
  5. Pour the dressing over the apple and broccoli mixture. Toss gently to coat without mashing the ingredients.
  6. Stir in the chopped walnuts or almonds for extra crunch and flavor.
  7. Serve immediately or refrigerate for about 30 minutes to allow flavors to meld.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Best consumed fresh to avoid browning of apples and sogginess of broccoli.
