Apple Cider Whoopie Pies: The Ultimate Fall Dessert That Never Fails

  • 2 cups all-purpose flour,
  • 1/2 cup brown sugar,
  • 1/2 cup vegetable oil,
  • 1 large egg,
  • 1 teaspoon baking soda,
  • 1 teaspoon ground cinnamon,
  • 1/2 teaspoon ground ginger,
  • 1/4 teaspoon nutmeg,
  • 1/2 teaspoon salt,
  • 8 oz cream cheese, softened,
  • 1/4 cup butter, softened,
  • 2 cups powdered sugar,
  • 2 tablespoons reduced apple cider,
  • 1 teaspoon vanilla extract

Instructions

  • Reduce apple cider by half in a saucepan over medium heat, about 15 minutes. Cool completely.
  • Preheat oven to 350°F. Line baking sheets with parchment paper.
  • Whisk flour, baking soda, cinnamon, ginger, nutmeg, and salt in medium bowl.
  • Beat reduced cider, brown sugar, oil, and egg until smooth in large bowl.
  • Fold dry ingredients into wet ingredients until just combined.
  • Drop 2-tablespoon portions onto prepared sheets, 2 inches apart.
  • Bake 12-15 minutes until cakes spring back when touched. Cool completely.
  • Beat cream cheese, butter, powdered sugar, remaining reduced cider, and vanilla until smooth.
  • Sandwich filling between cooled cakes. Refrigerate until ready to serve.
