  • 6 cups mixed greens or baby spinach
  • 2 crisp apples (Honeycrisp or Fuji), thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup crumbled feta or goat cheese (optional)
  • Dressing:
  • 3 tbsp olive oil
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • 1. Add mixed greens to a large salad bowl.
  • 2. Top with sliced apples, dried cranberries, walnuts, and cheese if using.
  • 3. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  • 4. Drizzle dressing over salad just before serving.
  • 5. Toss gently and serve immediately.
