Apple Mille Feuille with Vanilla Custard

A delightful dessert that beautifully combines the crispness of apples with creamy smoothness of custard, perfect for celebrations or sweet cravings.

  • 150 g granulated sugar
  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (for layering)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch (for custard)
  • 600 ml milk (whole / skimmed / lactose-free or vegetable)
  • 50 g granulated sugar (for custard)
  • 1/4 tsp salt (for custard)
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the pan: First, get a heavy-bottomed pan or saucepan that will evenly distribute the heat.
  2. Melt sugar: Take 150 g of granulated sugar and place it in the pan. Set it over medium heat. Let it melt without stirring.
  3. Watch for color: Keep an eye on the color, and once it turns a deep golden amber, it’s ready (around 10 minutes).
  4. Pour the caramel into your serving dish.
  5. Prepare apples: Peel and core the apples. Slice them thinly.
  6. Add sugar and salt to the apple slices.
  7. Cook apples: Place the apple mixture in a skillet over medium heat. Cook for about 5 minutes.
  8. Thicken with cornstarch: Sprinkle 1 tbsp of cornstarch over the cooked apples. Cook for an additional 2-3 minutes.
  9. Layer the apple mixture over the caramel in the serving dish.
  10. Whisk egg yolks with 50 g of sugar and 1/4 tsp of salt.
  11. Mix 2 tbsp of cornstarch with some of the 600 ml of milk.
  12. Heat the remaining milk over medium heat.
  13. Combine the warm milk with the egg yolk mixture.
  14. Cook custard: Pour the mixture back into the saucepan and cook until thickened (about 10 minutes).
  15. Add vanilla and allow the custard to cool before pouring over the apples.

Notes

Let the dessert cool in the refrigerator for at least an hour before serving to set the layers.
