Asiago Chicken Gnocchi

A delightful dish featuring tender chicken, potato gnocchi, fresh spinach, and creamy asiago cheese, perfect for family dinners or special occasions.

  • 3 boneless skinless chicken breasts (about 1 ½ pounds), pounded to an even thickness
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 5 tablespoons unsalted butter, divided
  • 1 medium shallot, diced (about ⅓ cup)
  • 1 teaspoon garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 1 package (16 ounces) potato gnocchi, uncooked
  • 2 cups fresh baby spinach
  • ½ cup Asiago cheese, finely grated
  • Fresh parsley, chopped for garnish

Instructions

  1. Prepare the chicken by patting the chicken breasts dry with paper towels and seasoning both sides with salt and pepper.
  2. Cook the chicken in a large non-stick skillet with 2 tablespoons of butter over medium heat for about 8 to 10 minutes, flipping halfway.
  3. Keep warm by transferring chicken to a plate and covering loosely with foil.
  4. Make the sauce by melting the remaining butter in the skillet, adding diced shallot, and cooking for 3 to 5 minutes.
  5. Add minced garlic to the skillet and cook for another minute.
  6. Add flour to the mixture, whisking for about 1 minute until combined.
  7. Pour in the chicken broth gradually, whisking constantly, and cook for 3 to 5 minutes until slightly thickened.
  8. Stir in the half-and-half and gnocchi, cooking for 5 to 7 minutes until the gnocchi is tender.
  9. Add spinach and grated Asiago cheese, and cook for another 2 to 3 minutes until the spinach wilts.
  10. Combine the chicken with the gnocchi mixture in the skillet to serve.
  11. Serve garnished with freshly chopped parsley.

Notes

For best results, pound chicken to ensure even cooking. Fresh ingredients will elevate the dish. Customize with other vegetables or cheeses as desired.
