Authentic Jamaican Curry Chicken

  • 2 lbs chicken, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 23 Scotch bonnet peppers, chopped
  • 2 cups chicken stock
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for about 3-4 minutes until it softens.
  3. Next, add the minced garlic and continue to sauté for another minute.
  4. Stir in the curry powder and allspice, cooking for another minute to release the aroma.
  5. Add the chicken pieces, coating them well with the spice mixture. Sauté for about 5-7 minutes until browned.
  6. Pour in the chicken stock and bring it to a gentle simmer.
  7. Lower the heat, cover the pot, and let it cook for about 30 minutes.
  8. After 30 minutes, stir in the coconut milk and chopped Scotch bonnet peppers. Simmer for an additional 15-20 minutes.
  9. Season to taste with salt and pepper.
  10. Serve hot with rice or your preferred side dish.

Notes

For best flavor, consider marinating the chicken with spices in advance. Adjust the heat by using fewer Scotch bonnet peppers based on your spice preference.
