- 1 English cucumber, cut into thin matchsticks
- 1 cup cilantro leaves and tender stems, chopped
- 4 green onions, thinly sliced
- 1–2 Anaheim or jalapeƱo chiles, thinly sliced
- 2 celery stalks, thinly sliced (optional)
- Dressing:
- 1 1/2 tbsp rice vinegar
- 1 1/2 tsp sesame oil
- 1/2 tsp soy sauce or tamari
- 2 tsp sugar
- 1/2 tsp kosher salt
- Garnish: roasted peanuts, toasted sesame seeds
- 1. Prepare vegetables: cut cucumber into thin matchsticks or slices, slice green onions and chiles thinly, chop cilantro coarsely, slice celery if using. Combine in large bowl.
- 2. Whisk together rice vinegar, sesame oil, soy sauce, sugar, and salt until sugar dissolves.
- 3. Pour dressing over vegetables and toss gently to coat evenly.
- 4. Top with chopped peanuts and sesame seeds. Serve immediately or chill briefly.
Notes
- Anaheim chiles milder than jalapeƱos – adjust heat to taste.
- Cucumber matchsticks stay crisper than slices.
- Xinjiang version uses tomatoes + red onion instead.
- Perfect BBQ or hot pot accompaniment.
