Banana Cinnamon Rolls

- For the dough:
- 3/4 cup warm milk (110°F)
- 1 packet (2 1/4 tsp) active dry yeast
- 1/4 cup granulated sugar
- 1 egg + 1 egg yolk
- 1/4 cup melted butter
- 1/2 cup mashed ripe banana (about 1 large banana)
- 3 cups all-purpose flour
- 1/2 tsp salt
- For the filling:
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 1/4 cup mashed banana
- 1/4 cup softened butter
- For the icing:
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp milk (as needed)
- 1. In a bowl, mix warm milk, yeast, and a pinch of sugar. Let sit for 5–10 minutes until foamy.
- 2. Add remaining sugar, eggs, melted butter, mashed banana, and salt. Stir until combined.
- 3. Gradually add flour and knead until dough is soft and elastic (about 8–10 minutes).
- 4. Place dough in a greased bowl, cover, and let rise 1 hour or until doubled.
- 5. Roll dough into a 14×9-inch rectangle.
- 6. Mix brown sugar, cinnamon, mashed banana, and butter to form the filling.
- 7. Spread filling evenly over dough and roll tightly from the long side.
- 8. Cut into 12 rolls and place in a greased baking dish.
- 9. Cover and let rise another 30–45 minutes.
- 10. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
- 11. Whisk together icing ingredients and spread over warm rolls before serving.
Notes
- You can prepare the rolls the night before and refrigerate overnight — just bake in the morning.
- Add chopped nuts or chocolate chips for extra texture.
- Store leftovers covered at room temperature for up to 2 days, or refrigerate for up to 5 days.
