- Fried Rice:
- 2 tbsp sesame oil (divided)
- 4 large eggs (beaten)
- ½ tsp kosher salt
- 2 large carrots (diced)
- 1 large onion (diced)
- ¼ cup green onions (diced + garnish)
- 1 tsp garlic (minced)
- 4 cups cooked long-grain rice (day-old, cooled)
- ¼ cup unsalted butter (melted)
- 1 tsp lemon juice
- 2 tbsp soy sauce
- ⅓ cup frozen peas
- Bang Bang Sauce:
- ½ cup mayo + ¼ cup sweet chili sauce + 2 tbsp sriracha + 1 tsp rice vinegar
- 1. Preheat air fryer to 400°F. Toss chicken cubes with oil, paprika, garlic powder, salt, pepper.
- 2. Air fry 11-12 mins flipping halfway until 165°F golden. Toss half chicken with ½ cup bang bang sauce.
- 3. High heat skillet: 1 tbsp sesame oil, scramble beaten eggs + salt. Set aside.
- 4. Medium-high: 1 tbsp sesame oil, sauté carrots/onion/green onions 5 mins, garlic 1 min.
- 5. Add cooled rice, break up clumps, cook 2-3 mins.
- 6. Stir in eggs, butter, lemon juice, soy sauce, peas. Cook 2 mins until hot.
- 7. Plate rice, top with sauced chicken + drizzle extra sauce. Garnish green onions.
