Better Than Starbucks Egg Bites Recipe

Tender, fluffy Egg Bites with creamy cottage cheese, melty cheese, and your favorite fillings. Better than Starbucks, these protein-packed bites are perfect for meal prep breakfast on-the-go.

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded Gruyere or cheddar cheese
  • 1/4 cup cooked bacon or chopped ham (optional)
  • 1/4 cup chopped roasted red pepper or spinach
  • 2 tablespoons green onions, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

Instructions

  • 1. Preheat oven to 300°F (150°C). Grease silicone muffin pan or spray with oil.
  • 2. In a blender, combine eggs, cottage cheese, shredded cheese, salt, pepper, garlic powder, and paprika. Blend until smooth and frothy.
  • 3. Pour mixture evenly into muffin wells, filling 3/4 full. Divide bacon/ham, veggies, and green onions among cups.
  • 4. Place muffin pan in a larger pan with 1 inch of hot water (for gentle steaming).
  • 5. Bake 25-30 minutes until just set and slightly puffed.
  • 6. Cool 5 minutes, remove from pan, and enjoy warm or chilled.
