Black Forest Muffins

Delightful muffins combining rich chocolate flavor with tart cherry notes, perfect for breakfast, snacks, or dessert.

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup cherry jam
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Chocolate shards for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the all-purpose flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and sugar together in another large bowl until light and fluffy.
  4. Add the eggs one at a time to the butter and sugar mixture, mixing thoroughly after each addition, then add the vanilla extract.
  5. Combine the mixed dry ingredients into the wet batter until just mixed.
  6. Fill each muffin cup halfway with batter, add a spoonful of cherry jam, and top with more batter until 3/4 full.
  7. Bake for about 18-20 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the tin for a few minutes and prepare the whipped cream.
  9. Top each muffin with whipped cream and sprinkle with chocolate shards before serving.

Notes

Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
