  • 1/2 cup vegetable oil
  • 1/2 cup unsalted butter, melted

  • 1/2 cup blackberry purée
  • 1/2 cup hot water or coffee

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup blackberry purée
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • 1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  • 2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  • 3. In another bowl, beat eggs, sugar, buttermilk, oil, melted butter, vanilla, and blackberry purée until combined.
  • 4. Gradually add dry ingredients to wet, mixing just until smooth.
  • 5. Stir in hot water or coffee until batter is slightly thin.
  • 6. Divide batter between pans and bake 30–35 minutes, or until a toothpick comes out clean.
  • 7. Cool cakes completely before frosting.
  • 8. Prepare buttercream: beat butter until fluffy, add powdered sugar gradually, then mix in blackberry purée, vanilla, and salt.
  • 9. Frost cooled cakes and garnish with fresh blackberries.

Notes

  • For a deeper gothic look, use extra dark cocoa powder.
  • Chill cake layers before frosting to avoid crumbs.
  • Can be made 1 day ahead; store covered at room temperature or refrigerate.
