  • 2 lbs boneless skinless chicken thighs,
  • 2 teaspoons garlic powder,
  • 1 teaspoon onion powder,
  • 1 teaspoon paprika,
  • 1 teaspoon dried thyme,
  • 1 teaspoon sea salt,
  • 1/2 teaspoon black pepper,
  • 2 tablespoons olive oil,
  • 6 cups chopped romaine lettuce,
  • 2 large tomatoes, diced,
  • 8 strips turkey alternative, crumbled,
  • 1/2 cup mayonnaise,
  • 2 tablespoons apple cider vinegar,
  • 1 tablespoon Dijon mustard

Instructions

  • Pat chicken dry and season with garlic powder, onion powder, paprika, thyme, salt, and pepper. Let rest 15 minutes.
  • Heat olive oil in large skillet over medium-high heat. Cook chicken 6-7 minutes per side until internal temperature reaches 165°F.
  • Let chicken rest 10 minutes, then chop into bite-sized pieces.
  • Whisk together mayonnaise, apple cider vinegar, and Dijon mustard until smooth.
  • Combine chopped chicken, romaine lettuce, tomatoes, and turkey alternative. Add dressing and toss to coat.
  • Divide into meal prep containers and refrigerate for up to 5 days.
