Blueberry Breakfast Quesadilla

  • 1/2 cup fresh or frozen blueberries
  • 2 tbsp cream cheese or Greek yogurt
  • 1 tsp honey or maple syrup
  • 1/4 tsp cinnamon
  • Butter or coconut oil for cooking
  • Optional toppings: powdered sugar, extra honey, or fresh mint

Instructions

  • 1. Spread cream cheese or Greek yogurt evenly on one tortilla.
  • 2. Drizzle with honey and sprinkle with cinnamon.
  • 3. Scatter blueberries evenly over the surface.
  • 4. Top with the second tortilla and gently press down.
  • 5. Heat butter or coconut oil in a skillet over medium heat.
  • 6. Cook quesadilla for 2–3 minutes per side until golden brown and crispy.
  • 7. Slice into wedges and serve warm with extra honey or yogurt for dipping.

Notes

  • For extra protein, use Greek yogurt instead of cream cheese.
  • Swap blueberries for strawberries, raspberries, or a mixed berry combo.
