Blueberry Pastry Rings with Vanilla Cream Filling

Delightful pastry rings filled with tart blueberries and sweet vanilla cream, perfect for breakfast, brunch, or dessert.

  • 1 package of puff pastry (thawed)
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 egg (for egg wash)
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar for dusting

Instructions

  1. Prepare the Blueberry Filling: Start by washing the blueberries in cold water. In a medium-sized saucepan, toss the blueberries with granulated sugar, cornstarch, and lemon juice. Cook over medium heat for about 5 to 7 minutes until the mixture starts to bubble and the blueberries soften. Remove from heat and let it cool while you prepare the pastry.
  2. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  3. Roll Out the Pastry: On a lightly floured surface, gently roll out the puff pastry sheets to about 1/8 of an inch thick.
  4. Cut the Pastry Rings: Using a round cookie cutter or a glass, cut out circles from the pastry. For each ring, cut a smaller circle in the center of one of the pastry circles to create a ring shape.
  5. Assemble the Pastry Rings: Place the whole circles on the prepared baking sheet. Spoon a small amount of the blueberry filling onto the center of each circle. Then, place the ring-shaped pastry on top of each filled circle, gently pressing down around the edges to seal them.
  6. Egg Wash: Beat the egg in a small bowl and brush the egg wash over the top of each pastry ring.
  7. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes until puffed and golden brown.
  8. Prepare the Vanilla Cream Filling: While baking, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract; continue whipping until stiff peaks form.
  9. Cool Pastries: Once baked, remove the pastry rings from the oven and let them cool on a wire rack.
  10. Fill with Cream: After cooling, fill the center of each ring with the prepared vanilla cream.
  11. Serve: Dust with powdered sugar if desired and serve fresh.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Best served fresh.
