Blueberry Swirl Yogurt Bites

Delicious and healthy Blueberry Swirl Yogurt Bites made with creamy Greek yogurt and sweet blueberries, perfect as a snack or dessert.

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until the blueberries soften.
  2. If using cornstarch, dissolve it in a bit of water and stir it into the blueberry mixture to thicken it. Remove from heat and let it cool completely.
  3. In a bowl, mix the Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey or maple syrup if desired.
  4. Spoon the yogurt into silicone molds or mini muffin tins, filling each about three-quarters full.
  5. Add a spoonful of the cooled blueberry compote on top of each yogurt portion. Use a toothpick to swirl gently to create a marbled effect.
  6. Freeze the molds for at least 3 hours or until solid.
  7. Once frozen, remove the yogurt bites from the molds and store in an airtight container in the freezer. Let them sit for 2-3 minutes before eating for the best texture.

Notes

Adjust the sweetness based on your taste; use silicone molds for easy removal.
