2 sheets frozen puff pastry, thawed,
6 large eggs, scrambled,
1 cup shredded cheddar cheese,
1/4 cup milk,
1 cup mixed vegetables, sautéed,
1 large egg for wash,
2 tablespoons butter,
Salt and pepper to taste,
Optional toppings: sesame seeds, herbs
Instructions
Scramble eggs with milk until just set. Sauté vegetables in butter until softened. Let both cool completely.
Preheat oven to 400°F. Roll out first puff pastry sheet on parchment-lined baking sheet.
Spread cooled egg mixture and vegetables on pastry, leaving 1-inch border. Sprinkle with cheese. Top with second pastry sheet and seal edges.
Brush with egg wash and cut steam vents. Bake 25-30 minutes until golden brown and puffed. Cool 10-15 minutes before slicing.
