  • 2 sheets frozen puff pastry, thawed,
  • 6 large eggs, scrambled,
  • 1 cup shredded cheddar cheese,
  • 1/4 cup milk,
  • 1 cup mixed vegetables, sautéed,
  • 1 large egg for wash,
  • 2 tablespoons butter,
  • Salt and pepper to taste,
  • Optional toppings: sesame seeds, herbs

Instructions

  • Scramble eggs with milk until just set. Sauté vegetables in butter until softened. Let both cool completely.
  • Preheat oven to 400°F. Roll out first puff pastry sheet on parchment-lined baking sheet.
  • Spread cooled egg mixture and vegetables on pastry, leaving 1-inch border. Sprinkle with cheese. Top with second pastry sheet and seal edges.
