Ingredients

  • 4 large eggs
  • 4 small flour or corn tortillas
  • 4 slices bacon (or breakfast sausage)
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped avocado
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp butter or oil
  • Salt and pepper, to taste
  • Optional: hot sauce or salsa for serving

Instructions

  • 1. Cook bacon in a skillet until crispy, then drain on paper towels.
  • 2. In a small bowl, whisk eggs with a pinch of salt and pepper.
  • 3. Heat butter in a skillet and scramble eggs until soft and fluffy.
  • 4. Warm the tortillas in a dry pan or microwave for a few seconds.
  • 5. Assemble tacos: add scrambled eggs, bacon, cheese, tomatoes, and avocado.
  • 6. Top with cilantro and drizzle with hot sauce or salsa if desired.
  • 7. Serve immediately for the best flavor.
