Broccoli Stir Fry with Chickpeas

A quick and healthy stir fry featuring broccoli and chickpeas, packed with vitamins and protein for a nutritious meal.

Ingredients

  • 2 cups broccoli florets
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the minced garlic and grated ginger to the pan and stir frequently for about 1 minute.
  3. Add the broccoli florets and drained chickpeas to the pan, stir-frying for about 5-7 minutes until the broccoli is tender-crisp.
  4. Pour in the soy sauce (or tamari) and sesame oil, mixing well to coat the broccoli and chickpeas.
  5. Season with salt and pepper to your preference.
  6. Serve the stir fry hot over a bed of cooked rice or quinoa.

Notes

You can customize the dish by adding other vegetables or proteins like tofu for added nutrition.
