Brookie Cookies

A delightful blend of fudgy brownies and chewy chocolate chip cookies, these Brookie cookies are a crowd-pleaser for any occasion.

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup cocoa powder
  • 1/4 cup chocolate chips for brownies

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the unsalted butter in a large bowl and let it cool.
  3. Mix the brown sugar and granulated sugar into the melted butter until smooth.
  4. Add the eggs and vanilla extract and stir until glossy.
  5. Prepare a bowl with flour, baking soda, and salt.
  6. Combine the dry ingredients with the wet mixture, folding gently.
  7. Divide the dough into two parts; add cocoa powder and extra chocolate chips to one half.
  8. Spoon rounded dollops of both doughs on a lined baking sheet, alternating as desired.
  9. Bake for 12-15 minutes until edges are golden brown.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a thicker cookie, chill the dough for about 30 minutes before baking.
