Brown Butter Brookies combine the gooey richness of brownies with the soft, chewy goodness of chocolate chip cookies, enhanced by the unique flavor of brown butter.

  • 1/2 cups unsalted butter, melted and cooled
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg, room temp
  • 1 tbsp vanilla extract
  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking soda
  • 1/2 tsp flaky sea salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup unsalted butter (for brownie layer)
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract (for brownie layer)
  • 1/2 cup light brown sugar (for brownie layer)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the melted and cooled unsalted butter, light brown sugar, and granulated sugar until well combined.
  3. Add the egg and vanilla, mixing until smooth and creamy.
  4. Whisk together the all-purpose flour, baking soda, and flaky sea salt in a separate bowl.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined, then fold in the chocolate chips.
  6. Melt the unsalted butter for the brownie layer over low heat and whisk in cocoa powder, vanilla, and light brown sugar until smooth.
  7. Pour the brownie batter into the prepared baking pan and spread evenly, then layer the cookie dough on top.
  8. Bake for about 25-30 minutes, checking for doneness with a toothpick.
  9. Cool in the pan for 10-15 minutes, then transfer to a wire rack, slice into squares, and enjoy.

Notes
