Brown Sugar Pop Tart Cookies

Soft, chewy cookies inspired by brown sugar cinnamon Pop-Tarts complete with a cinnamon-brown sugar filling and sweet glaze on top.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • Filling:
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp flour
  • 2 tbsp melted butter
  • Glaze:
  • 1 cup powdered sugar
  • 12 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon

Instructions

  • 1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • 2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  • 3. Add eggs and vanilla, then mix until smooth.
  • 4. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  • 5. Gradually mix dry ingredients into the wet ingredients until a dough forms.
  • 6. In a small bowl, mix the filling ingredients until combined.
  • 7. Scoop out dough balls (about 2 tablespoons each), flatten slightly, and place 1 teaspoon of filling in the center.
  • 8. Fold the dough around the filling and roll back into a ball.
  • 9. Bake for 10–12 minutes or until golden on the edges. Let cool completely.
  • 10. Whisk together glaze ingredients, drizzle over cooled cookies, and let set before serving.

Notes

  • For an authentic Pop-Tart flavor, add a pinch of nutmeg to the filling.
  • Store cookies in an airtight container for up to 5 days.
  • You can freeze the dough balls before baking for a quick treat anytime!
