  • 4 oz feta cheese, crumbled

  • 1 lb cherry tomatoes, quartered

  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  • 1. In food processor, combine cream cheese, feta, 2 tbsp olive oil, and lemon zest. Blend until smooth and creamy (2-3 minutes). Spread into shallow serving dish.
  • 2. In bowl, toss quartered tomatoes, chopped basil, minced garlic, balsamic vinegar, 1 tbsp olive oil, salt, and pepper. Let sit 10 minutes.
  • 3. Spoon tomato mixture over cheese base. Drizzle with balsamic glaze.
  • 4. Serve with crostini, crackers, or pita chips. Garnish with extra basil.
