Ingredients

Scale
  • — Donut Bars —
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 2 tbsp unsalted butter, softened
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1 tsp vanilla extract
  • Vegetable oil, for frying
  • — Glaze —
  • 4 tbsp unsalted butter, browned
  • 2 cups powdered sugar
  • 3 tbsp pure maple syrup
  • 1 tbsp milk (more if needed)
  • Seeds from 1 vanilla bean (or 1 tsp vanilla extract)

Instructions

  • 1. In a bowl, whisk flour, baking powder, baking soda, salt, and nutmeg.
  • 2. In another bowl, cream sugar and butter. Beat in eggs, then mix in buttermilk and vanilla.
  • 3. Gradually add dry ingredients to form a soft dough. Chill for 30 minutes.
  • 4. Roll dough on a floured surface to about 1/2 inch thickness. Cut into bar shapes.
  • 5. Heat oil in a deep pan to 350°F (175°C). Fry donut bars in batches until golden brown on both sides, about 1–2 minutes per side. Drain on paper towels.
  • 6. For glaze, brown butter in a small saucepan until nutty and golden. Whisk in powdered sugar, maple syrup, milk, and vanilla bean seeds until smooth.
  • 7. Dip warm donut bars into glaze and place on a rack to set before serving.

Notes

  • Best enjoyed the same day they’re made.
  • Add a pinch of cinnamon to the glaze for extra warmth.
  • If glaze thickens, whisk in a splash more milk.
