Buttery Cheese Garlic Rolls

Delightful rolls combining garlic and creamy mozzarella, perfect for any occasion.

  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter
  • 1 tablespoon fresh parsley, chopped
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for the dough)
  • 2 egg yolks
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese, shredded
  • Garlic butter made previously
  • 1 egg (for egg wash)

Instructions

  1. Roast Garlic: Preheat the oven to 160°C (320°F). Cut off the top of the garlic head, drizzle with olive oil, sprinkle salt, cover with foil, and roast for about 2 hours until soft.
  2. Make Garlic Butter: Squeeze the roasted garlic into a bowl. Add softened butter, parsley, and 2 tablespoons of roasting oil. Mix and set aside.
  3. Prepare Yeast Mixture: Combine warm milk, active dry yeast, and honey in a bowl. Let sit for about 10 minutes until frothy.
  4. Make the Dough: In a large bowl, mix all-purpose flour, bread flour, sugar, optional milk powder, softened butter, salt, egg yolks, and yeast mixture until sticky.
  5. Knead the Dough: Knead with a mixer on medium speed for 15-20 minutes until soft and smooth.
  6. Proof the Dough: Place in a bowl, cover, and let rise in a warm place for about 90 minutes or until doubled in size.
  7. Roll Out the Dough: Punch down the dough and roll to about 1/4 cm thickness on a floured surface.
  8. Add Garlic Butter and Cheese: Spread garlic butter over rolled-out dough and sprinkle mozzarella cheese on top, pressing gently.
  9. Roll the Dough: Tightly roll the dough into a log shape.
  10. Cut the Dough: Slice into 6 equal portions using a sharp knife or dental floss.
  11. Second Proof: Place on a baking sheet, cover, and let proof again for about 30 minutes.
  12. Bake the Rolls: Preheat oven to 175°C (350°F). Brush with egg wash and bake for 20-25 minutes until golden brown.
  13. Decorate and Serve: Brush with leftover garlic butter and sprinkle parsley on top before serving.

Notes

These rolls are best served warm. Store leftovers in an airtight container for up to 2 days or in the refrigerator for up to a week.
