Cajun Boiled Eggs with Spicy Garlic Butter Sauce

  • 68 hard-boiled eggs, peeled
  • 1 stick unsalted butter
  • 1/4 cup sliced onions
  • 1 tbsp minced garlic
  • 1 tsp garlic paste
  • 1/4 cup vegetable broth
  • 1 tsp Old Bay seasoning
  • 1/4 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp red pepper flakes

Instructions

  1. Boil the eggs: Place them in a saucepan, cover with water, and bring to a boil. Reduce heat to medium and cook for about 10-12 minutes. Drain and cool in ice water, then peel.
  2. Melt the butter: In a saucepan over medium heat, melt the stick of unsalted butter, being careful not to burn it.
  3. Cook the onions: Add sliced onions to the butter and cook until soft, about 3-4 minutes.
  4. Add garlic and seasonings: Stir in minced garlic and garlic paste, then add cayenne, paprika, garlic powder, onion powder, and red pepper flakes. Mix well.
  5. Combine with broth: Pour in vegetable broth and let simmer for about 5 minutes, stirring occasionally.
  6. Dress the eggs: Place boiled eggs in a serving bowl and pour hot spicy garlic butter sauce over, coating each egg.
  7. Serve warm or chilled, garnishing with fresh herbs if desired.

Notes

For a milder flavor, reduce the cayenne and omit the red pepper flakes. Store leftovers in an airtight container for up to 3-5 days.
