Caramelized Banana Oatmeal Recipe

Caramelized banana oatmeal is a cozy breakfast where creamy cinnamon oats are topped with golden maple-caramelized banana slices and crunchy nuts. It tastes like dessert but uses simple, wholesome ingredients and comes together in about 15 minutes.

  • 2 cups milk or dairy-free milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 2 bananas sliced into thick rounds
  • 2 tbsp coconut oil or butter
  • 23 tbsp maple syrup
  • 2 tbsp chopped walnuts or pecans
  • Optional: nut butter, extra cinnamon, chocolate chips

Instructions

  • 1. Add oats and milk to a saucepan. Bring to a gentle boil, then reduce heat and simmer 5–8 minutes until thick and creamy, stirring in vanilla, cinnamon, and salt.
  • 2. While oats cook, heat coconut oil in a skillet over medium heat. Stir in maple syrup, then add banana slices in a single layer.
  • 3. Cook bananas 3–5 minutes per side until deeply golden and caramelized.
  • 4. Spoon oatmeal into bowls, top with caramelized bananas, nuts, and a drizzle of extra maple syrup or nut butter.

Notes

  • Slice bananas a bit thick so they hold shape while caramelizing.
  • For more protein, stir chia seeds or nut butter into the oats.
  • Best served immediately while bananas are warm and caramel sauce is glossy.
