Caramelized Blueberry Upside Down Cake

  • 2 cups blueberries
  • 1 cup sugar
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a round cake pan with butter or cooking spray.
  3. Cook the butter and 1/2 cup of sugar in a saucepan until melted, then add the blueberries and cook until soft.
  4. Pour the blueberry mixture into the prepared cake pan.
  5. Combine the flour, baking powder, salt, and remaining sugar in a bowl.
  6. Beat the eggs with milk and vanilla in another bowl until combined.
  7. Mix the wet ingredients into the dry ingredients until just combined.
  8. Pour the batter over the blueberries and spread gently.
  9. Bake for 30-35 minutes, until golden brown.
  10. Cool for 10 minutes, then invert onto a serving plate.
  11. Serve warm, optionally with whipped cream or ice cream.
