Caramelized Onion and Goat Cheese Tarts Recipe

Elegant caramelized onion and goat cheese tarts with a flaky pastry base. Sweet, slow-cooked onions pair perfectly with tangy goat cheese for a crowd-pleasing appetizer or light meal.

  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • 1 sheet puff pastry, thawed
  • 4 oz goat cheese, crumbled
  • 1 egg, beaten (for egg wash)
  • Optional: balsamic glaze or honey for drizzling

Instructions

  • 1. Heat olive oil in a skillet over medium-low heat.
  • 2. Add onions, salt, and pepper; cook slowly for 20–25 minutes until soft and caramelized.
  • 3. Stir in thyme and remove from heat.
  • 4. Preheat oven to 400°F (200°C).
  • 5. Roll out puff pastry and cut into squares or circles.
  • 6. Place pastry on a lined baking sheet and score a border around each piece.
  • 7. Spread caramelized onions inside the border.
  • 8. Top with crumbled goat cheese.
  • 9. Brush edges with beaten egg.
  • 10. Bake for 15–18 minutes until puffed and golden.
  • 11. Drizzle with balsamic glaze or honey if desired and serve warm.

Notes

  • Can be made ahead and reheated briefly in the oven.
  • Try adding a sprinkle of walnuts for crunch.
  • Great as an appetizer, brunch item, or light dinner with salad.
