- 2 large onions, thinly sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1 sheet puff pastry, thawed
- 4 oz goat cheese, crumbled
- 1 egg, beaten (for egg wash)
- Optional: balsamic glaze or honey for drizzling
- 1. Heat olive oil in a skillet over medium-low heat.
- 2. Add onions, salt, and pepper; cook slowly for 20–25 minutes until soft and caramelized.
- 3. Stir in thyme and remove from heat.
- 4. Preheat oven to 400°F (200°C).
- 5. Roll out puff pastry and cut into squares or circles.
- 6. Place pastry on a lined baking sheet and score a border around each piece.
- 7. Spread caramelized onions inside the border.
- 8. Top with crumbled goat cheese.
- 9. Brush edges with beaten egg.
- 10. Bake for 15–18 minutes until puffed and golden.
- 11. Drizzle with balsamic glaze or honey if desired and serve warm.
