Caribbean Chicken and Rice

A comforting meal combining tender chicken, aromatic spices, and creamy coconut milk, perfect for family dinners or gatherings.

  • 2 cups of rice
  • 1 pound of chicken (cut into pieces)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 bell pepper (chopped)
  • 1 can of coconut milk
  • 2 cups of chicken broth
  • 1 teaspoon of thyme
  • 1 teaspoon of allspice
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and bell pepper. Cook until softened.
  2. Add the chicken pieces and season with salt, pepper, thyme, and allspice. Cook until the chicken is browned on all sides.
  3. Stir in the rice, then add coconut milk and chicken broth. Bring to a boil.
  4. Reduce heat to low, cover the pot, and simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
  5. Fluff the rice with a fork, adjust seasoning if necessary, and garnish with chopped green onions before serving.

Notes

For extra flavor, brown the chicken well. You can soak the rice for about 30 minutes before cooking to help it cook evenly. Adjust spices to taste.
