Carne Guisada

A hearty, slow-simmered Latin-style beef stew made with tender chunks of beef, onions, peppers, garlic, and warm spices in a rich, savory gravy perfect with rice or tortillas.

Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 cup water
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tbsp cornstarch (optional, for thickening)
  • Fresh cilantro for garnish

Instructions

  • 1. Season beef chunks with salt and pepper.
  • 2. Heat oil in a large pot or Dutch oven over medium-high heat.
  • 3. Brown the beef in batches until deeply seared; remove and set aside.
  • 4. In the same pot, sauté onion and bell peppers until softened.
  • 5. Add garlic and tomato paste; cook for 1 minute until fragrant.
  • 6. Stir in cumin, chili powder, paprika, and oregano.
  • 7. Return beef to the pot and add beef broth, water, and bay leaves.
  • 8. Bring to a boil, then reduce heat to low and cover.
  • 9. Simmer for 1½–2 hours, stirring occasionally, until beef is fork-tender.
  • 10. Optional: Mix cornstarch with 2 tbsp water and stir in to thicken.
  • 11. Remove bay leaves, garnish with cilantro, and serve hot.

Notes

  • Serve over white rice, mashed potatoes, or with warm tortillas.
  • Add diced potatoes or carrots for a heartier stew.
  • Flavor deepens even more the next day perfect for leftovers.
