  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups shredded carrots
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  • 1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  • 2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  • 3. In another bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
  • 4. Gradually mix dry ingredients into wet ingredients.
  • 5. Fold in shredded carrots.
  • 6. Spread batter evenly into prepared pan.
  • 7. Bake for 22–26 minutes until a toothpick inserted comes out clean.
  • 8. Allow bars to cool completely.
  • 9. Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
  • 10. Spread frosting over cooled bars, slice, and serve.

Notes

  • For added texture, mix in chopped walnuts or pecans.
  • Chill bars before slicing for cleaner edges.
