- 1/4 cup brown sugar

- 1 1/2 cups shredded carrots
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- 1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- 2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- 3. In another bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
- 4. Gradually mix dry ingredients into wet ingredients.
- 5. Fold in shredded carrots.
- 6. Spread batter evenly into prepared pan.
- 7. Bake for 22–26 minutes until a toothpick inserted comes out clean.
- 8. Allow bars to cool completely.
- 9. Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
