Carrot Cake Energy Balls Recipe

These no-bake carrot cake energy balls capture all the warm spices and chewy texture of carrot cake in healthy bite-sized form. Packed with oats, dates, fresh carrots, and pecans, they’re naturally sweetened and perfect for snacks or post-workout fuel.

Ingredients

  • 1 cup shredded carrots
  • 1 cup pitted Medjool dates
  • 1 cup rolled oats
  • 1/2 cup pecans
  • 1/3 cup shredded coconut
  • 1/4 cup raisins
  • 2 tbsp almond butter
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • 1. Shred carrots using box grater or food processor. Pat dry with paper towels.
  • 2. Pulse dates in food processor until forms paste. Add pecans and pulse until chopped.
  • 3. Add oats, coconut, carrots, raisins, almond butter, spices, vanilla, and salt. Process until dough forms.
  • 4. Chill mixture 15 minutes. Roll into 1-inch balls.
  • 5. Optional: Roll in extra coconut. Refrigerate 30 minutes before serving.

Notes

  • Pat shredded carrots dry to prevent sticky balls.
  • Store in airtight container in fridge up to 1 week.
  • Freeze up to 2 months. Thaw 15 minutes before eating.
