Carrot Cake Roll

A delightful twist on classic carrot cake, this Carrot Cake Roll is moist and flavorful, filled with creamy frosting, perfect for any occasion.

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 15×10 inch jelly roll pan.
  2. Mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt together in a medium bowl.
  3. Beat the eggs and granulated sugar in a separate bowl until light and fluffy, about 3-5 minutes.
  4. Stir in the vanilla extract and grated carrots into the egg mixture.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 12-15 minutes until golden and springy to the touch.
  8. Remove from the oven and roll the cake with the parchment paper, let it cool completely.
  9. Make the frosting by mixing softened cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Unroll the cooled cake, spread the frosting, and roll it back up without the parchment paper.
  11. Slice and serve the cake beautifully on a platter.

Notes

Best served with coffee or tea, and you can garnish with powdered sugar or nuts.
