Carrot Soup is a creamy, vibrant soup made from fresh carrots and flavorful spices. It’s simple to make, comforting, and perfect as a starter or light meal.

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 tsp ground ginger
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1/2 cup coconut milk or cream
  • Fresh parsley or cilantro for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion and garlic; sauté until translucent.
  • 3. Add carrots, ground ginger, and cumin; cook for 5 minutes.
  • 4. Pour in vegetable broth and bring to a boil.
  • 5. Reduce heat and simmer until carrots are tender, about 20 minutes.
  • 6. Use an immersion blender to puree until smooth.
  • 7. Stir in coconut milk or cream.
  • 8. Season with salt and pepper.
  • 9. Garnish with fresh herbs before serving.
