  • 2½ cups all-purpose flour
  • ½ cup granulated sugar
  • 3 large eggs (room temp)
  • 3 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  •
  • Coconut Glaze:
  • 1 cup coconut milk
  • 2 tbsp granulated sugar
  • 1 cup sweetened shredded coconut
  • 1 tsp vanilla extract (optional)

Instructions

  • 1. Preheat oven 350°F. Grease bundt pan generously + flour. Tap excess.
  • 2. Add all cake ingredients to blender. Blend 1-2 mins until smooth, no flour lumps.
  • 3. Pour batter into prepared pan. Tap counter to release bubbles.
  • 4. Bake 45-50 mins until golden and toothpick clean. Cool pan 15 mins.
  • 5. Invert onto wire rack over rimmed baking sheet.
  • 6. While warm: combine glaze ingredients in saucepan. Simmer 3 mins until thickened.
  • 7. Poke holes all over cake with skewer. Slowly spoon hot glaze over cake.
  • 8. Let soak completely. Garnish extra coconut. Chill 2+ hours. Slice thick.

  • Toasted coconut garnish = flavor + texture upgrade.
  • Glaze doubles easily for extra-soaked decadence.
