  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla
  • 1 cup hot coffee
  •
  • Buttercream:
  • 2 cups unsalted butter softened
  • 6 cups powdered sugar
  • ¼ cup heavy cream
  • 2 tsp vanilla
  • Neon gel colors
  •
  • Candy chaos:
  • 2 cups assorted sprinkles
  • 1 cup M&Ms
  • ½ cup chopped Snickers
  • ½ cup mini marshmallows
  • 4 oz melted chocolate
  • Gold leaf/candy melts

Instructions

  • 1. Preheat oven 350°F. Grease 9×13 sheet pan, line parchment. Whisk dry ingredients. Beat buttermilk, oil, eggs, vanilla. Add dry to wet alternating with hot coffee.
  • 2. Pour into pan. Bake 30-35 mins until toothpick clean. Cool completely.
  • 3. Beat butter fluffy. Gradually add powdered sugar, cream, vanilla until light. Divide into portions, color wildly (hot pink, electric blue, lime green, purple).
  • 4. Spread messy buttercream swoops, swirls, dollops over cake – no smooth edges.
  • 5. Create candy clusters: mix M&Ms, chopped candy bars, marshmallows, sprinkles. Spoon random piles around cake. Drizzle melted chocolate. Add gold leaf, extra sprinkles.
  • 6. Chill 15 mins to set drips. Serve with oversized candles.
