Cheddar and Herb Soda Bread: The Perfect No-Yeast Comfort Loaf

A rustic and savory soda bread loaded with sharp cheddar cheese and fragrant herbs. Quick to make without yeast, this bread is perfect alongside soups, stews, or enjoyed warm with butter.

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp dried thyme (or fresh herbs)
  • 1 tsp dried rosemary
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups buttermilk

Instructions

  • 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  • 2. In a large bowl, whisk together flours, baking soda, baking powder, salt, sugar, thyme, and rosemary.
  • 3. Stir in shredded cheddar cheese until evenly distributed.
  • 4. Make a well in the center and pour in buttermilk.
  • 5. Mix gently until dough comes together (do not overmix).
  • 6. Turn dough onto floured surface, shape into a round loaf, and place on baking sheet.
  • 7. Score a cross on top with a sharp knife.
  • 8. Bake for 35–40 minutes until golden brown and sounds hollow when tapped.
  • 9. Cool slightly before slicing and serving.
