Cheese and Pepper (Cacio e Pepe)

A traditional Italian dish showcasing the beauty of simplicity with creamy pasta, Pecorino Romano cheese, and freshly ground black pepper.

Ingredients

  • Spaghetti or other pasta
  • Pecorino Romano cheese
  • Freshly ground black pepper
  • Butter
  • Salt
  • Pasta water

Instructions

  1. Start by bringing a large pot of salted water to a boil. Add your spaghetti or chosen pasta to the boiling water. Cook following the package instructions until the pasta reaches an al dente texture.
  2. Before you drain the pasta, remember to save a cup of the pasta water.
  3. Carefully drain the cooked pasta in a colander, avoiding rinsing it with cold water.
  4. Melt a generous amount of butter in a large skillet over medium heat.
  5. Once the butter is melted and foamy, add the drained pasta and freshly ground black pepper.
  6. Gradually pour in the reserved pasta water while stirring to combine.
  7. Next, stir in the grated Pecorino Romano cheese until it melts and combines.
  8. Serve your Cheese and Pepper immediately with additional grated cheese and black pepper on top.

Notes

Use the best quality ingredients for the best flavor. Freshly ground black pepper is recommended.
