Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced

  • 1 cup milk

  • Optional toppings: croutons, chopped green onions, sour cream

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Sauté the chopped onion, diced carrots, and diced celery for about 5 minutes.
  3. Add the beef broth and diced potatoes. Bring to a boil, then simmer for 15 minutes.
  4. Simmer until the potatoes are tender.
  5. Incorporate milk and shredded cheddar cheese, stirring until melted.
  6. Season with salt and pepper to taste before serving.
  7. Serve hot with optional toppings.

Notes

For a spicy kick, add crushed red pepper flakes or jalapeños. Use lean ground beef for a lighter soup, or substitute with turkey for a healthier option.
