  • ½ cup shredded cheddar cheese
  • 1 cup sliced pepperoni (about 60 small slices)
  • 2 tbsp cream cheese, softened
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp crushed red pepper flakes (optional)
  • ¼ cup grated parmesan cheese
  • Cooking spray or parchment paper
  • Dip:
  • ½ cup sugar-free marinara sauce

Instructions

  • 1. Preheat oven to 375°F. Line mini muffin tin with parchment liners or spray well with cooking spray.
  • 2. Arrange 3-4 pepperoni slices in each muffin cup, overlapping to form a cup shape. Press gently to fit.
  • 3. Mix mozzarella, cheddar, cream cheese, Italian seasoning, garlic powder, and red pepper flakes until combined. Spoon 1 tbsp cheese mixture into each pepperoni cup. Sprinkle with parmesan.
  • 4. Bake 10-12 minutes until pepperoni is crisp and cheese is bubbly and golden. Cool in tin 5 minutes to set.
  • 5. Pop bites out gently. Serve warm with warmed sugar-free marinara for dipping.
