Cheesy Mashed Potato Puffs: Crispy Golden Comfort Food Bites

Crispy, golden puffs made from leftover mashed potatoes and loaded with cheese. Perfect comfort food bites for sides or appetizers.

  • 3 cups leftover mashed potatoes, room temperature,
  • 1 cup sharp cheddar cheese, grated,
  • 1/2 cup Parmesan cheese, grated,
  • 2 large eggs, beaten,
  • 1/4 cup all-purpose flour,
  • 3 green onions, finely chopped,
  • 2 tablespoons fresh chives, chopped,
  • 1 teaspoon garlic powder,
  • 1/2 teaspoon paprika,
  • 1/4 teaspoon black pepper,
  • 1/2 teaspoon salt,
  • 2 tablespoons melted butter for brushing

Instructions

  • Preheat oven to 400°F. Grease mini muffin tin thoroughly with butter or cooking spray.
  • Combine room temperature mashed potatoes with both cheeses, beaten eggs, and flour in large bowl. Mix gently but thoroughly.
  • Add green onions, chives, garlic powder, paprika, pepper, and salt. Fold together until just combined.
  • Portion mixture into mini muffin cups, filling 3/4 full. Smooth tops and brush with melted butter.
  • Bake 18-22 minutes until golden brown and set. Avoid opening oven door for first 15 minutes.
  • Cool in pan 5 minutes before removing. Serve hot for best texture and flavor.
