Cheesy Mushroom and Spinach Omelet

Instructions

  1. Heat the skillet: Begin by warming a non-stick skillet over medium heat. Once it’s hot, add the butter or oil.
  2. Sauté the onions: Toss in the diced onions and stir occasionally for about 2-3 minutes until they turn translucent.
  3. Cook the mushrooms: Next, add the sliced mushrooms and cook for an additional 3-4 minutes, stirring often.
  4. Add spinach: After the mushrooms are ready, sprinkle in the fresh spinach and cook for about 2 more minutes.
  5. Beat the eggs: Crack the eggs into a bowl, add salt and pepper, and whisk until well mixed.
  6. Pour in the eggs: Carefully pour the beaten eggs over the sautéed vegetables in the skillet.
  7. Cook the omelet: Allow it to cook for about 3-5 minutes until the edges begin to set.
  8. Fold the omelet: Once the cheese is added, fold the omelet in half and let it cook for another minute.
  9. Serve hot: Slide the omelet onto a plate and enjoy!
