  • Potato Layer:
  • 4 cups frozen tater tots
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Cheese & Sauce:
  • 1 cup nacho cheese sauce (warmed)
  • 1½ cups shredded cheddar cheese
  • ⅓ cup sour cream
  • Assembly:
  • 5 large burrito-size flour tortillas
  • Taco sauce or chipotle sauce (optional)
  • Cooking spray

Instructions

  • 1. Cook tater tots on baking sheet at 425°F for 20 minutes until crispy, tossing halfway. Toss hot tots with olive oil, garlic powder, and smoked paprika. Set aside.
  • 2. Brown ground beef in skillet over medium-high heat until no pink remains. Drain fat. Add taco seasoning and water; simmer 5 minutes until thickened. Remove from heat.
  • 3. Warm nacho cheese sauce in microwave (30-second intervals, stirring between).
  • 4. Warm tortillas in dry skillet 15 seconds per side until pliable. Working with one at a time: spread 2 tbsp nacho cheese down center. Layer ½ cup seasoned beef, ¾ cup crispy tater tots, 2 tbsp sour cream, and ¼ cup shredded cheddar.
  • 5. Fold bottom up over filling, fold in sides, then roll tightly. Repeat with remaining tortillas.
  • 6. Heat large skillet over medium. Spray burritos lightly with cooking spray. Cook seam-side down first, 2-3 minutes per side until golden and crispy. Cut in half to serve.
