- 1 tbsp olive oil or butter
- 1/4 cup onion, chopped
- 4 large eggs
- 2 tbsp milk
- 1/2 cup shredded cheddar cheese
- Salt and pepper, to taste
- Optional toppings: chives, hot sauce, or avocado slices
- 1. Heat oil or butter in a large skillet over medium heat.
- 2. Add diced potatoes and cook until golden brown and tender, about 8–10 minutes. Stir occasionally.
- 3. Add onions and cook for 2–3 minutes until softened.
- 4. In a bowl, whisk eggs with milk, salt, and pepper.
- 5. Pour egg mixture over the cooked potatoes and onions.
- 6. Gently stir until eggs are just set and creamy.
- 7. Sprinkle cheese on top and cook until melted.
- 8. Serve warm with your favorite toppings.

- You can use leftover roasted potatoes for a faster version.
