Cheesy Potato Egg Scramble

A warm and hearty breakfast made with golden potatoes, fluffy scrambled eggs, and gooey melted cheese quick to make and perfect for busy mornings.

  • 2 medium potatoes, diced
  • 1 tbsp olive oil or butter
  • 1/4 cup onion, chopped
  • 4 large eggs
  • 2 tbsp milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional toppings: chives, hot sauce, or avocado slices

Instructions

  • 1. Heat oil or butter in a large skillet over medium heat.
  • 2. Add diced potatoes and cook until golden brown and tender, about 8–10 minutes. Stir occasionally.
  • 3. Add onions and cook for 2–3 minutes until softened.
  • 4. In a bowl, whisk eggs with milk, salt, and pepper.
  • 5. Pour egg mixture over the cooked potatoes and onions.
  • 6. Gently stir until eggs are just set and creamy.
  • 7. Sprinkle cheese on top and cook until melted.
  • 8. Serve warm with your favorite toppings.

Notes

  • You can use leftover roasted potatoes for a faster version.
  • Add bell peppers, spinach, or cooked bacon for extra flavor.
  • For extra creaminess, use shredded mozzarella or Monterey Jack cheese.
