A one-pot Cheesy Taco Pasta that blends the comforting taste of pasta with bold taco flavors, perfect for busy weeknights.

  • 8 ounces elbow macaroni or any pasta shape
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 2 cups beef broth or chicken broth
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1 cup sour cream (optional)
  • Salt and pepper to taste
  • Chopped fresh cilantro or green onions (for garnish)

Instructions

  1. Brown the meat: Start by heating a large pot over medium heat. Add the ground beef or turkey to the pot and cook until browned, about 5 to 7 minutes.
  2. Add the pasta and seasoning: Once the meat is browned, add the elbow macaroni and taco seasoning, mixing well.
  3. Pour in the broth and tomatoes: Add the diced tomatoes and broth, ensuring the liquid covers the pasta.
  4. Cook the pasta: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 10 to 12 minutes until the pasta is cooked.
  5. Add the cheese and sour cream: Remove from heat and stir in the shredded cheese and sour cream until melted and creamy.
  6. Taste and adjust seasoning if needed.
  7. Garnish and serve: Top with chopped cilantro or green onions.
