Cheesy Vegetable Chowder Recipe

  • 2 cups potatoes, peeled and diced

  • 1 cup broccoli florets, chopped
  • 1 cup corn kernels (fresh or frozen)
  • 3 cups vegetable broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • Fresh parsley or chives for garnish

Instructions

  • 1. Melt butter and olive oil in a large pot over medium heat.
  • 2. Add onion and garlic; sauté until soft and fragrant.
  • 3. Sprinkle flour over vegetables and stir for 1 minute.
  • 4. Slowly add vegetable broth, stirring constantly.
  • 5. Add potatoes and carrots; bring to a simmer and cook 10 minutes.
  • 6. Stir in broccoli and corn; cook another 5–7 minutes until tender.
  • 7. Pour in milk and heavy cream; reduce heat to low.
  • 8. Stir in shredded cheddar cheese until melted and smooth.
  • 9. Season with salt, pepper, and smoked paprika if using.
  • 10. Garnish with parsley or chives and serve warm.
